Recipe: Simple Potato Gnocchi

I’ve been promising this one since it went up on insta, after vowing to make it for months, so here’s my simple recipe to make gnocchi. I found this made 4 generous portions.

1.Peel 2 medium sized potatoes chop into large pieces and boil in a large pan of slightly salted water for 15 minutes. You want the potatoes to be tender, but not too soft.

2. Once potatoes are done, drain and mash until smooth. Allow potatoes to cool for about 15 minutes before continuing.

3.Once potatoes are cooled, add one whisked egg and 200g flour to form a dough. We found the best way to do this was add the egg first and mix in and then gradually add the flour until it comes together. (You may need to vary this flour content slightly depending on the exact size of your potato, so go slowly when adding it).HOMECOOKING Gnocchi 2 13.04.17Once it begins to come together just lightly knead the dough until it forms a ball. It will be slightly sticky compared to typical pastry, this is fine.

4.Before rolling out I split the dough into 4 pieces to make it easier to work with. Roll each piece out into a long strip about 2cm thick and 1cm high. Cut the strip into your small gnocchi (about 1-1/2cm pieces).

homecooking-gnocchi-3-13-04-17.jpg5. Cook the gnocchi in batches for about 2-3 minutes in boiling water (they rise to the top once done.) Get them out quickly once at the top so they stay light and fluffy.

I served mine with a simple tomato sauce: 1 can chopped tomatoes, 1/2 tsp tomato puree, 1 clove garlic (crushed) basil, salt and pepper to season, and topped this with some rocket and shaved Parmesan. A burnt butter sauce would also work great.
